I approached interviewing such a seasoned media personality with some trepidation however Lyndey put me entirely at ease as we laughed and chatted about all things food and Port Stephens. Lyndey Milan told News Of The Area, “I have been to Port Stephens when my eldest child was a baby we visited the Country Club and I have been back since and I am very much looking forward to coming back again for the Love Seafood Festival.” At the Festival Lyndey will be hosting a dinner created by our local chefs working together to showcase the stunning produce that the Port has to offer. “The dinner is an exciting event having such a wonderful menu and being able to sample all the chefs different takes on local seafood is something that money can’t normally buy.” Her cooking is influenced by seasonal produce, where she is in the world, and how she feels, at present her favourite dish to cook is a paella. Lyndey sees a promising future for food tourism at the Bay she believes that Rick Stein’s enterprise Bannisters will help drive tourism to Port Stephens. For those that are looking for the perfect fish dinner at home Lyndey recommends a really fresh fish fillet with skin on cooked in a pan with butter and olive oil. “Simply place the fish into the hot butter and oil skin down and allow to cook, keep it flat and don’t turn it, finish the fillet with a squeeze of lemon and enjoy,” she said. When it comes to cooking fish Lyndey has the an edge, as she has been teaching cooking seafood at the Sydney Seafood School at the Fish Markets for many years.
