PK’s Restaurant opens at Hawks Nest Golf Club

Peter Park and Kay Kim will specialise in providing Australian and Asian-fusion meals in PK’s Restaurant using high quality fresh produce.

 

PETER Park and Kay Kim have been welcomed as the new proprietors of the restaurant at the Hawks Nest Golf Club, now known as PK’s Restaurant.

Peter and Kay accepted the opportunity to take on the catering contract at the Club following the departure of George Deng in early December 2021.

The pair discovered Tea Gardens/Hawks Nest on one of their many trips north of Sydney while on annual holidays.

“This is the place where our heart is,” Kay said of her new home.

Peter and Kay will specialise in providing Australian and Asian-fusion meals in PK’S Restaurant using high quality fresh produce.

While their standard fare will be the presentation of high quality Australian meals, there will also be a range of Korean meals available on the menu.

Peter, who qualified as a Chef at Noah’s Hotel in Newcastle in the 1990’s, moved to Australia from South Korea some 40 years ago.

Upon completion of his apprenticeship Peter worked as a Chef at Centre Point Tower in Sydney followed by a stint at the Renaissance Hotel in the city.

He subsequently worked with high profile French chef Jean Pierre at Barnaby’s Waterfront Restaurant in Parramatta, which specialised in five star fine dining.

During this period Peter qualified as a ‘Four Hatted Chef’ (the highest level of Chef) and ultimately became the Executive Chef at Barnaby’s where he continued to work until 2012.

A highlight of Peter’s time at Barnaby’s was during the Sydney Olympic Games in 2000 when they hosted Chelsea Clinton, the daughter of US President Bill Clinton, and a large group of US dignitaries and officials – featuring FBI Agents, black limousines and high security.

Peter’s main interest outside of cooking was to play golf and he was a member of Strathfield Golf Club where he played off a handicap of 12.

In 2012 Peter was approached by the Board at Strathfield Golf Club and asked to give consideration to taking on the catering contract at the Club.

Peter and Kay accepted this challenge and they conducted a very successful restaurant for the next seven years.

Following their time at Strathfield, Peter and Kay then took on the catering contract at the Springwood Country Club where they worked for the next few years.

Prior to moving to Australia from South Korea, some 30 years ago, Kay studied English and English Literature at university.

This led to an initial period of employment where Kay worked as an Australian/Korean interpreter.

Upon moving to Australia she then successfully completed a Diploma in Hospitality.

Like Peter, Kay is a keen golfer and currently plays off a handicap of 15.

The Hawks Nest Lady Golfers have already recognized Kay’s golfing ability and have persuaded her to become a member of the Club’s Ladies Pennants Team.

A highlight of Kay’s golfing career was in 2021 when she won a statewide competition, the NSW Women’s Bronze Bowl, held at New South Wales Golf Club.

PK’s is open for lunch from Wednesday to Sunday from 12noon until 2pm and dinner from Tuesday to Sunday from 5pm.
